Fresh salmon tartare!
A fresh, colorful and very simple recipe to make!
For 4/5 people
- 2 beautiful fresh salmon pavers without the skin (ask your fishmonger to do it)
- 1 grenade
- 1 small shallot
- One big avocado or 2 small ones
- The zest of a lime (preferably not treated because the skin is used)
- Yellow lemon juice
- Salt, pepper, (chilli pepper)
- Dill, or other fresh grass
- For the vinaigrette (see my recipe for mango/passion Coulis here)
Just add olive oil and salt/pepper to the coulis to make a vinaigrette!
The steps of the recipe
In a bowl, add the previously chopped shallot, dice the salmon , grate the lime zest and add the lemon juice, cover and refrigerate.
While waiting for the salmon to marinate, dice the avocado and empty the pomegranate.
Add the avocado/pomegranate mixture with the salmon and mix well, pour part of the vinaigrette, dill and season with salt and pepper to your liking.
Prepare the tartare and add a little dressing as decoration on the plate.
